Sticky Cola Chicken & Parmesan Mashed Potatoes
WOW, it's been a couple weeks since I updated my blog. Sorry, just been super busy with life. Still training hard and eating better. I'm not eating 100% clean but about 85-90% so that's good and even the "non-clean" stuff I eat is still lower in calories and fat.
I haven't done a weekly check-in, in awhile so I thought I would do one now. I weighed in this morning at 166lbs. That's total loss of 7lbs since I started My 2011 Goal I'm a little behind in where I was hoping to be at this stage but I had a couple weeks where I didn't eat well at all, so that's to be expected. I'm still very happy with the 7lbs gone! :) I also kicked up my workouts and I am finding it's making a difference. What I am doing now between weight training sets is running a lap around the gym. This really gets my heart pumping and helps to burn those calories. So as long as I stay on track with my food, I should have some really good losses coming up.
I have a couple new recipes to share with you! I use to make them all the time when I was following weight watchers and decided to make them again for the family. Everyone loves this, even the kids do and it's super easy to make! It's not a "clean" meal but really low in calories and fat.
Sticky Cola Chicken
Serves 4-5
Ingredients:
4-5 skinless, boneless chicken breast
1 cup ketsup
(1) 12oz. can of diet coke
Directions:
Put chicken in a non-stick skillet.
Pour ketsup and diet coke over chicken and stir until mixed well.
Turn heat to medium high and cook chicken for approx. 30 mins, stirring occasionally.
Cover and reduce heat to a simmer and cook another 15-20 mins.
Remove lid and cook until sauce thickens and sticks to chicken.
Sauce will taste like BBQ sauce and the chicken is very tender.
Note: You can also make shredded BBQ chicken sandwiches with this. Simply us 2 forks and pull chicken apart about 15 minutes before it's finished cooking.

Parmesan Mashed Potatoes
Serves 8 (2/3 cups per serving)
Ingredients:
10 medium red potatoes (about 2 1/2 lbs)
1/2 cup buttermilk, warmed
1/2 oz. Parmesan cheese, grated (about 3 tbsp)
1/4 cup chives, chopped
1 tsp salt
1/8 ts. black pepper
Directions:
Wash potatoes and cut into fours (keep skins on), place potatoes in a large pot and cover with water. Bring to boil, reduce heat, and simmer until cooked (fork tender). Drain and return potatoes to pot. Mashed potatoes with a potato masher. Stir in remaining ingredients and mix well.

Weekly Weigh-In: Week 2
I had a pretty good week, stayed on track about 95% of the time with my eating and trained really hard. I was so expecting a loss on the scale come Saturday, but as life goes, I started my period, so when I got on the scale I weighted in exactly the same as last week: 171lbs. I usually carry an extra 2-4 lbs during the time of the month, so I'm sure that's the reason for the "no change" on the scale this week.Even tho the # on the scale didn't change, I feel a difference already. I don't feel as bloated, pants don't seem as tight and my husband says my stomach has gone down. I'm training really hard so I know I'm putting on muscle as well so I have to keep that in mind when I jump on the scale on Saturdays. As long as I can tell my body is changing I'm not going to be so focused on the scale. Or least try not too :)

Weekly Weigh-In: Week 1
Hello everyone and Happy Saturday! :)Today was my first week weight-in after starting my 2011 Goals. I have to say I did pretty good, I ate about 98% clean all week. I did have 1 cheat meal on Thursday that wasn't planned and I actually felt really bad about it afterwards BUT I'm only human and can't expect perfection. I did get right back into eating clean after that and still had a loss for the week, so that is good!
I weighted in at 171 lbs. That's a 2 lb loss since last week. I'm happy with that as my goal was 2-3 lbs. I also hit a PR (personal record) on leg presses during leg training this week, so that was awesome! I'm going to be posting my training routine soon so I'll give more details in that post.
So all in all, it was a good week! Looking forward to the week to come and hopefully dropping a couple more lbs! :)

Awesome Leg Workout Today & Weight Loss Update
Hey everyone, hope your week is going well so far. Mine is going great!I had a awesome leg workout at the gym today. Had a lot of energy and was able to squat 145 lbs. The most I have ever squatted. :) Matthew's goal for me is to squat 185lbs. so we'll see how I do. That's alot of weight for me so it's alittle scary. LOL!!
I also weighted in this morning at 153.5lbs. which is a 6 lbs. loss since I started back. That's about 2lbs. a week so I'm happy with that. I have my goal weight set at 140lbs. but honestly the weight isn't that big of a deal. I'm more concerned with my bodyfat and how my clothes fit. I'd like to be down to at least 24% bodyfat, I was at 27.6%. I can currently fit nicely in a size 8 jean and some size 6's. I would love to get down to a size 4-6. So that's more of my goal than the actual # on the scale.
I had a yummy snack today using the sandwich thins I posted about a couple weeks ago. I made mini pizzas with them. I toasted the sandwich thins first to get them alittle crispy, then I took pizza sauce, 2% cheese and turkey pepperoni and broiled them for just a couple mins. They were pretty yummy and low in calories.

Tonight I'm going to be making chocolate pumpkin cupcakes, I'll have the recipe and pictures to share with you tomorrow!

My Before & Current Pictures
Ok I was going to hold off on posting any pictures but I decided to go for it.The picture on the left is my Before picture which was taken at my heaviest weight of 191 before I started ww. I lost most of my weight during ww, then gained some of it back and am now losing it again but not on ww this time.
The picture on the right is my current picture. I am still a work in progress but I look and most importantly feel so much better than I did back then.

Non-Scale Victory!
I had another non-scale victory this week that I wanted to share.I went shopping the other day and decided to try on size 8 jeans. I was hoping they would fit because all my size 10 are getting alittle big.
Me a size 8? Never!!!
So I grab a couple pair and head into the fitting room to try them on. They FIT!!! OMG they pulled up nice and easy and zipped and buttoned. WOW a size 8!! A single digit size!
It's been about 19+ years since I have fit into a single digit size.
So here I am for the next couple days thinking "I wonder if it's just jeans from that store, they run big" :) So I had to go to another store yesterday and try on others and the size 8s there fit as well. YEAH!
I know it's just a size but when I started this in Dec. I was a size 12 and here I am just 3 months later in a size 8. Two years ago when I started weight watchers, I was a size 16 and today I am a size 8! That just amazes me and I just wanted to share my little victory with you all! :)
It's not all about the # on the scale. Sometimes our achievements come in other ways!

Non-Scale Victories
So I thought I would share some of my non-scale victories with everyone. I believe these are more important than the number on the scale.- I have went down almost 2 full dress sizes since I started.
- I run now between workout sets instead of walking.
- I have muscles in my body I never knew I could get.
- My husband says my butt is getting so small :)
- I can do walking lunges really well now.
- My ring finger went from a size 9 down to a size 7.
- I sleep much better at night.
- I have more energy than I have had in a long time.
- I have had cookies and cakes in the house and have not eaten one bite.
- I eat more fruits and veggies than I have ever eaten in my life.
- I drink more water than I ever have.
- I am having regular bowel movements. (I know might be "TMI" but it's a BIG victory to me :)
I know there are many others I can't think of right now, so I'll be sure to post them as I remember them or as I achieve more!
