Taco Soup
Serving Size : 16

42 ounces chili beans in zesty sauce -- 3 cans
1 8 ounce can tomato sauce
2 cups water
1 can green chilies
1 envelope taco seasoning
1 envelope Hidden Valley Ranch dressing mix (dry)
1 lb. frozen corn
1 pound lean ground meat
1 chopped onion
In a Pam-sprayed pan, brown the meat and the onion together.
Combine the rest of the ingredients and simmer for 30 minutes.

121 Calories
1g Fat
11g Protein
21g Carbohydrate
4g Dietary Fiber
736mg Sodium.
NOTES : Only 2 pts. per cup for those following Weight Watchers.
I also top mine with a little bit of 2% cheddar cheese and a couple crunched up bake tortilla chips. YUMMY! Of course the nutritional information would need to be adjusted after you add the extra stuff.

Christmas Blessings To You!
I wanted to take some time out today to wish you and yours a very Merry Christmas! For the next couple days I am relaxing and enjoying this special time with my family. No yummy cookies or big gourmet dinners at our house this year. Both myself and my husband are staying on track with our diets. I did enjoy a biscuit and gravy and a slice of bacon for breakfast this morning but will watch what I eat the rest of the day so I should be ok. Back in the gym bright and early we go Sunday morning. :)Instead of a healthy food recipe, I decided to share this special recipe with you instead. Enjoy!
Recipe for Christmas All Year Long
Take a heap of child-like wonder

Video of Me at the Gym!
The other day on facebook, a good friend of mine mentioned that she hasn't seen any videos of me working out at the gym. All of the videos we have taken are of my husband. I PROMISE you I DO workout, I just never videotaped myself.So I had hubby grab the iphone and take this short video of me to prove I was at the gym. :) It's not very good quality and this was our last set so my arms were fried, but I wanted to share none the less since it is the first ever video of me working out. Maybe I might get him to take some more! :)

Starbucks "Carmel Apple Cider" Makeover
I don't like drinking my calories so I went on a quest to find a healthier alternative and I am pretty happy with what I have come up with.
Ingredients:
1 pack of Alpine Sugar-Free Cider
1-2 tsp. Archer Farms Sugar-Free Carmel Flavoring *
Cinnamon to taste
Dollop of Cool Whip Cream
Make cider according to package instructions (I use 8 oz. of water), add cinnamon and carmel flavoring. Mix well. Top with cool whip and enjoy!
I usually have a cup each night during the winter months. It taste really good and satisfies my sweet tooth as well. With less than 25 calories, it's much healthier than the Starbucks version too. :)
* Archer Farms products are sold at Target stores. You can also use any sugar-free carmel flavoring found in the coffee isle.

Peanut Butter Bars
Peanut Butter Bars
1 cup honey
1 cup natural peanut butter
1 cup oatmeal
1/2 cup chopped almonds
1/2 cup chopped walnuts
Melt honey and peanut butter in sauce pan over low heat until runny. Add oatmeal and nuts and blend well.
Pour mixture into 9x9 pan lined with wax paper. Let cool, then cut into bite size pieces.
These are very gooey. You can add more oatmeal to make them less gooey. They are really sweet too that's why I cut them in bite size pieces. I keep mine stored in the refrigerator and they are like a fudge like consistency.

Coming Soon! All New Mom Getting Fit!!
WOW it's been a long time since I have posted in this blog. Between work, kids, the gym, and life in general, I just haven't had the time OR should I say haven't made the time to keep up with this blog. I guess you could say the "fire" in me just wasn't there.
Over the last year I have been on a roller coaster of eating healthy, eating bad, eating healthy, eating bad, and back and forth. Lucky for me, I have kept up with working out so that has help but I have put on some weight and I'm ready to get that off. I have that "fire" burning inside me again. One thing I have also come to realize is that this blog actually helped me in my journey. It kept me accountable and kept me excited to try to products, experiment with new recipes and stay on track. So I have decided to get back into the blogging world. Life hasn't changed, I'm still just as busy BUT I am going to set aside time to devote to this blog.
With that said, I actually have several new ideas, lots of new recipes to share and product recommendations. I want to redesign the blog and add some new features. So in the next couple months you will see those changes coming. In the meantime, I will be posting here and there so please be sure to visit and don't forget to check out the Mom Getting Fit facebook page (see link below). It's a group of mom's who share our journeys to live a healthier life!
